Wheat Malt is the defining grain of the world's wheat beer traditions, prized for its soft, bready flavor and the full, fluffy body and rocky white head it builds. Its high protein content gives wheat beers their signature pillowy mouthfeel and brilliant foam stand, while its flavor stays gentle and fresh.

With an extract potential of 38 PPG and a color of 2 °Lovibond, Wheat Malt is one of the most efficient grains in the brewhouse and keeps the wort pale and bright. Because wheat has no husk, it is almost always mashed alongside barley malt, which provides the filter bed for lautering.

Pair it with an expressive wheat yeast like WB-06 for banana-and-clove character, or a clean American strain for a crisp, refreshing wheat ale.
